Head Brewer's Diary: 2nd week, February in 2023

Another wild week has come to an end at Gorilla Brewing.

I, Paul Edwards, Head Brewer of Gorilla Brewing, have some exciting updates to share with all of you beer lovers out there!

Monday, February 6th

We started off with a citrus bang as we finished up our kettle soured gose. We added Jeju Orange and Blood Orange, as well as our usual Sea Salt. The Jeju orange peel was thrown into the end of the boil to give that extra citrus kick that our taste buds have been craving.


Tuesday~Friday, February 7th~10th

Tuesday through Friday were a massive week of super brewing!

We brewed 3 batches a day for four days straight to fill our two 6,000-liter tanks. Andrew Gamble, Lead Brewer and Youngjae Jo, our Master Brewer, kept the brewery running smoothly while I was away at some Seoul meetings on Tuesday and Wednesday.


We also had a busy week of labeling and some barrel emptying. Plus, we added the final dry hop to our new beer series, Diversity, which we'll be launching later this month.

And to wrap up the week, we had a thorough cleaning of the brewery on Friday, getting ready for next week's brewing adventures.
