Head Brewer's Diary: 3rd week, February in 2023

Monday, February 13th

Today was all about staying on top of our daily tasks. We started the day with a thorough clean of our brewhouse, ensuring that everything was ready for the next round of brewing. We also had two big shipments headed to Seoul, and made a delivery to our friends in the Busan area. With all that out of the way, we took a moment to catch our breath and start preparing for the rest of the week.

Tuesday, February 14th

Today was a busy day in the brewery. We started early, catching up on all the labeling we had to do. With so many orders going out, it was important that everything was labeled correctly and ready to go. In addition to labeling, we also kegged our new collaboration beer with Daily Beer, a rich and chocolatey stout that we can't wait to launch next week.

Wednesday, February 15th

Today we focused on getting the brewery ready for Thursday's big brewing day. We started with a thorough clean of two of our tanks, getting rid of any residue from the previous brews. By the end of the day, we had everything ready and in place for a big day of brewing tomorrow.

Thursday, February 16th

Thursday was all about brewing. We brewed two batches of Gamgyulorum, our collaboration beer with Baek Jong-Won, and we couldn't be more excited about how it's turning out. It's a light, crisp beer with a hint of sweetness and a delicate balance of spices. It's sure to be a hit when it's released!

Friday, February 17th

Today was all about getting ready for next week's big canning week. We spent the day deep-cleaning the brewery, making sure that everything was in order and ready to go. We know it's going to be a busy week, but we're ready for it and can't wait to see what we'll be able to achieve. With the brewery sparkling and everything ready to go, we're feeling confident and excited for the week ahead.
