Head Brewer's Diary: 3rd week, January in 2023


Hello fellow beer enthusiasts! I'm Paul Edwards, the Head Brewer of Gorilla Brewing Company, and I'm excited to share with you a behind-the-scenes look at the life of a Head Brewer.


Monday, January 16th

Today, we're starting off the week with a big cleaning day. We're cleaning out our fermenters and the brewhouse, as well as doing some kegging and labeling. Cleanliness is key in brewing, as any lingering bacteria or debris can affect the taste and quality of our beer.



Tuesday, January 17th

Today we're brewing two batches of Busan Chocolate Stout for our partners at Daily Beer. We've been working on this collaboration for a while now, and we're excited to finally be launching it in time for Valentine's Day. It's a delicious stout with a unique twist that we think you'll love.


Wednesday, January 18th

A bit of a lighter day today, not much brewing going on. We're just canning some Busan Pale Ale for distribution. Even on the slower days, there's always something to be done in the brewery.


Thursday, January 19th and Friday, January 20th

Today and tomorrow we're brewing a triple batch of Honey Beer for our friends at TABE Korea. As usual, this is followed by a huge Friday Clean. Brewing beer is a labor of love and we love to make sure that everything is perfect.
